I was using a 50mm with, I guess, about a 30 degree rise, and narrow bars on my pompino. Jacknifed like crazy. Now have wider bars and a 90mm stem with about 10 degree rise, all better now, and I don't think I have lost any maneuverability. On a side note I also went back to flats, SPDs are fun, but I have to admit I don't have the skills to exploit them. It's nice to spend more time vertical.
Stem length

Hey, have you ever wondered what's the best length for a polo bike stem? Many people I saw at the London Open use very short BMX stems, and I guess that's for a reason. Although I don't think people pay that much of attention to that, I've been playing with a 100mm stem for almost two years now and I'm not complaining.
Any thoughts?
This video is the reason why I have my stem/bar setup the way it is... dude is nothing but serious real talk...
Just replace the terms...
"descending" with "riding while seated"
"climbing" with "stand and mash"
"29er" with "700c"
probably too seriously...

People pay way more attention to this than you give them credit for. I went with a 90mm stem Zero degree rise using the squarebuilt bars. Not too twitchy, out far enough I don't hit my knees and I can control the bike how I want to.
